    ½ cups of butter, softened
    1 teaspoon of orange extract or grated rind of one orange
    ½ cups of sugar
    ½ cups of brown sugar, firmly packed (light or dark)
    1 large egg, unbeaten
    1/4 cup of orange juice

    Instructions:

    1. In a large mixing bowl, sift together: the flour, baking soda, baking powder, and salt; then repeat the process and sift a second time.
    2. In another mixing bowl, cream the peanut butter, butter, orange rind or extract and sugars thoroughly with your electric mixer.
    3. Now beat in the egg to the creamed ingredients.
    4. Add the sifted dry ingredients, alternating with the orange juice and beat through until smooth after each addition.
    5. Grease the cookie sheets next.
    6. Shape the cookies into walnut size balls and place them about two inches apart on the cookie sheets.
    7. Bake in a 375-degree oven for about 12 minutes or until the cookies are lightly browned.
    8. Leave the cookies in the pan for about two minutes to let them firm up before removing them to a cooling rack.
